Sweet Fennel, Tart Apple

A simple and wonderful satisfying salad to accompany lunch. Thinly sliced fennel and apple. I used golden delicious. A drizzle of extra virgin olive oil, juice of half a lemon, 1/2 teaspoon salt, a heavy grind of black pepper and a splash of apple cider vinegar. Toss and let sit for 20 minutes. Enjoy on …
